If you’ve ever tried to grow your own basil, you know that it can flourish. This year, our basil grew so well that we couldn’t keep up with it. We added it to pizzas, salads, sandwiches, soups, and made sauces with it. At the end of the season, we wondered “What are we going to do with all this basil?” Letting it go to waste was not an option!
That’s when my husband came up with the brilliant idea of making a big batch pesto with it and freezing it into ice cubes for future use. It was a light bulb moment! Once the pesto cubes are frozen, transfer them to a resealable plastic bag. Grab what you need and reheat or let thaw in the fridge overnight. You’ll have homemade pesto in no time.
